To turn off Recent Contacts...

Select File > Preferences, and click on the Contacts section.
Select the check box next to “Do not automatically add contacts to the Recent Contacts view.”

I hate it too, but that's because as a freelance admin/developer I use lots of different ids and support lots of mail users and so lots of irreleant email addresses find their way into my Recent Contacts.
